Leek and Cucumber Salad

Ingredients for 4 serves in 15 minutes

leek, bulb and lower leaf-portion, raw 2.0 piece
cucumber, with peel, raw 4.0 piece
mayonnaise, regular 2.0 tablespoon
yogurt, plain, whole milk 2.0 tablespoon
salt 1.0 gram
black pepper, peppercorns, dried 1.0 gram
mustard 1.0 teaspoon

Quick and easy recipe for delicious addon to different kinds of meat. It is interesting combination of tastes - gentle and juicy cucumber with spicy leek. This connection of flavours both tastes great and is very nutricious.

Instructions how to prepare

  1. Wash vegetables in fresh water, leave to dry or soak the watter with paper towel.
  2. Cut the leek into thin slices, season with a little bit of salt, mix and put aside until the leeks starts beeing a little bit softer.
  3. Grate the cucumbers on large-mesh grater, or cut in very thin slices. Add a little bit of salt and wait until it releases its juices. Squeeze out excess juices.
  4. Mix the leek with cucumber, season with freshly grounded pepper and add yougurt and mayonaise. If you prefer spicy salads, you can add a teaspoon of mustard.
