Ginger pumpkin soup

Ingredients for 4 serves in 90 minutes

pumpkin, raw 800.0 gram
broth, vegetable, bouillon 700.0 mililiters
spices, pepper, red or cayenne 2.0 gram
ginger root, raw 20.0 gram
butter, without salt 2.0 tablespoon
salt 2.0 gram
sour cream, regular 100.0 gram
apple juice 300.0 mililiters
apples, raw, with skin 2.0 piece

Nothing warms you more than pumpkin, and ginger is known all over the world for its healing properties. Combine these ingredients and prepare a delicious soup.

Instructions how to prepare

  1. Peel the onion and ginger and chop finely.
  2. Peel the pumpkin, remove the seeds, cut the flesh into cubes.
  3. Fry the onion and ginger in heated butter until translucent.
  4. Add the pumpkin pulp and fry for 5 minutes. Add the broth and juice. Season with salt and pepper and bring to a boil. Cook over low heat for 10 minutes.
  5. Peel the apples, remove the cores and cut into cubes. Add to the soup and cook for about 5 minutes until they are soft. Take out 1 scoop of diced apples and pumpkin.
  6. Mix the remaining soup thoroughly, season with sour cream, salt and pepper to taste. Pour into plates and decorate with diced apples and pumpkins.
